Spinach Dip To Go

I suppose I should be embarrassed by this however it's just a small part of being busy and trying to still stay involved in a normal life! So here's the story...
I am part of a ministry at church that takes meals to people who are sick, have had surgery, or just generally need a pick-me-up and every once in a while they get all the volunteers together for an information meeting, etc. Tonight was that night.

While I haven't blogged yet about work, I'll just fill you in that I work. ALOT. And have been traveling. ALOT. So when I am home I try to become re-engaged in my "normal" life. Things like going to this volunteer get together. So I said, yes, I'll be there.

The meeting was set up for 6:30pm and this afternoon I discovered that I was supposed to bring a "snack" along - needless to say I hadn't made anything to take and didn't really have anything much at home to grab.

Bring on the Spinach Dip to Go!

Hopefully no one from the meeting reads this because we were supposed to make something and bring along the recipe. I do have a really fabulous recipe for Spinach Artichoke Dip - but of course didn't have time to make it. What I did have though is some left over purchased spinach dip from a baby shower last night :-)

Yep, you guessed it. I ran home from work in record time, pulled some extra frozen spinach from the freezer and popped it in the microwave, added the mayo and cheeses, mixed in the purchased spinach dip and then stuck it all in the oven for 7 minutes to get it all mushed together and somewhat warm. Added more cheese to the top and turned the broiler on for a couple minutes to get that "browned from the oven" look and ran back out the door to the meeting.
Of course with the actual recipe attached!

It would have been better a little warmer but...I made it there. On time. With a snack. And a recipe.

Here is the real recipe - it really is very good!

1 can (14oz.) Artichoke Hearts - Drained and Chopped
10oz. Frozen Chopped Spinach
3/4 cup Parmesan Cheese
3/4 cup Mayo
1/2 cup Mozzarella Cheese
1/2 tsp. Garlic Powder

Preheat Oven to 350 Degrees
Mix all ingredients and put in baking dish for 20 minutes at 350 degrees
